The Story Behind Cabbage Sabzi (History):
Cabbage Sabzi, or Patta Gobi ki Sabzi, is a humble yet beloved staple in Indian home cooking. It's a simple, quick, and healthy dry stir-fry. This dish is a testament to the everyday cooking of India, where simple, seasonal vegetables are transformed with a basic tempering and a few spices.

Ingredients (English):
1 medium Cabbage, shredded
1 Potato, cubed (optional)
½ cup Green Peas
2 tbsp Oil
1 tsp Mustard Seeds, 1 tsp Cumin Seeds
1 Onion, chopped
1 Tomato, chopped
Spices (turmeric, red chili powder, salt)
½ tsp Garam Masala
Method (English):
Tadka: Heat oil. Add mustard and cumin seeds. Add onions and sauté until translucent.
Cook: Add potatoes (if using) and peas. Cook for 5 minutes. Add the shredded cabbage, tomatoes, and all spices.
Simmer: Cover and cook on low-medium heat for 10-15 minutes, stirring occasionally, until the cabbage is tender. Finish with garam masala.

Use "Sauté" for the tadka. Add all vegetables and spices with ¼ cup water. Pressure cook on "High" for 2 minutes. Quick Release.
