  • The Story Behind Malai Kofta (History):

    Malai Kofta is a luxurious dish from Mughlai cuisine. "Malai" means cream and "Kofta" are fried dumplings. Historically, Mughlai food was characterized by its extensive use of cream and nuts, creating dishes fit for royalty. Malai Kofta is the vegetarian embodiment of this philosophy, with soft paneer and potato dumplings in a decadent, mildly spiced gravy.

  • Ingredients (English):

  • For Koftas: 2 large Potatoes (boiled, grated), 100g Paneer (grated), 2 tbsp Corn Flour, 1 tsp Ginger (finely chopped), Salt to taste, Oil for deep frying.

  • For Gravy: 2 tbsp Oil, 1 large Onion (pureed), 1 tbsp Ginger-Garlic Paste, 2 large Tomatoes (pureed), ¼ cup Cashew Paste, Spices (red chili powder, turmeric, coriander powder, garam masala), ¼ cup Fresh Cream, Salt to taste.

  • Method (English):

  • Make Koftas: Mix grated potatoes, paneer, corn flour, ginger, and salt. Form small, oval-shaped balls.

  • Fry Koftas: Deep fry the koftas on medium heat until golden brown. Drain and set aside.

  • Make Gravy: Heat oil. Sauté onion puree until golden. Add ginger-garlic paste. Add tomato puree, cashew paste, and all spices. Cook until oil separates.

  • Finish Gravy: Add 1 cup of water and salt. Simmer. Stir in fresh cream and garam masala.

  • Serve: Gently place fried koftas into the hot gravy just before serving.

  • To prevent koftas from breaking, ensure the potato mixture is not too moist and the oil is medium-hot. For the gravy, using a blend of cashews and melon seeds (magaz) provides an extra rich texture without being too heavy.


    Instant Pot Method (Gravy Only):

  • Use "Sauté" mode to make the gravy. Pressure cook the base on "High" for 5 minutes. Quick Release, stir in cream, and add fried koftas.

  • Air-Fryer Method (Koftas Only):

  •  Brush kofta balls with oil. Air fry at 375°F (190°C) for 15-18 minutes, shaking halfway, until golden and crisp.

  • How To Make It Vegan

    This is an advanced vegan recipe. Replace Paneer with an equal amount of mashed, extra-firm tofu. Replace Cream (Malai) with a rich cashew cream. Ensure all ghee is replaced with a neutral-flavored oil.
